Dhaniyalu Karam Podi is a traditional Andhra-style spice powder made using roasted coriander seeds and dry red chilies. This flavorful podi is a staple in South Indian kitchens and is best enjoyed with hot rice and ghee.

Dhaniyalu Karam Podi Recipe (Step-by-Step)

Ingredients

  • Coriander seeds (Dhaniyalu) – 1 cup

  • Dry red chilies – 10 to 12 (adjust to taste)

  • Bengal gram (Chana dal) – 2 tbsp

  • Black gram (Urad dal) – 1 tbsp

  • Cumin seeds – 1 tsp

  • Garlic cloves – 6 to 8 (optional)

  • Asafoetida (Hing) – ¼ tsp

  • Salt – as required

  • Oil – 1 tsp (optional, for roasting)


Step 1: Dry Roast the Ingredients

  • Heat a pan on low flame.

  • Add coriander seeds and dry roast until aromatic. Remove and keep aside.

  • Roast dry red chilies until crisp.

  • Roast chana dal and urad dal until golden brown.

  • Roast cumin seeds lightly.

  • If using garlic, roast until light golden.

👉 Tip: Always roast on low flame to avoid burning.


Step 2: Cool Completely

  • Let all roasted ingredients cool fully.

  • This helps in grinding a smooth, flavorful powder.


Step 3: Grind the Podi

  • Add roasted ingredients to a mixer jar.

  • Add salt and hing.

  • Grind to a coarse or fine powder (as you like)
