Chakkalu Recipe at Home (Traditional Andhra Snack)

Chakkalu are crispy, deep-fried Andhra-style rice crackers, popularly prepared during Sankranti, Diwali, and family functions. They are flavorful, crunchy, and perfect as a tea-time snack. This recipe shows how to make traditional chakkalu at home easily.


Ingredients 

  • Rice flour – 2 cups

  • Chana dal (soaked & coarsely crushed) – ½ cup

  • Green chilies – 2 (finely chopped)

  • Ginger – 1 tablespoon (finely chopped)

  • Cumin seeds – 1 teaspoon

  • Sesame seeds – 1 tablespoon

  • Red chili powder – 1 teaspoon (adjust to taste)

  • Butter – 2 tablespoons

  • Asafoetida (hing) – a pinch

  • Curry leaves – 8–10 (finely chopped)

  • Salt – to taste

  • Water – as required

  • Oil – for deep frying


Step-by-Step Chakkalu Recipe

Step 1: Prepare Chana Dal

  1. Wash chana dal and soak for 2 hours.

  2. Drain completely.

  3. Grind coarsely without adding water.


Step 2: Prepare the Dough

  1. In a large bowl, add rice flour.

  2. Add crushed chana dal, green chilies, ginger, cumin seeds, sesame seeds, curry leaves, red chili powder, hing, butter, and salt.

  3. Mix everything well.

  4. Add water little by little and knead into a firm but smooth dough.

  5. Cover and rest for 10 minutes.


Step 3: Shape the Chakkalu

  1. Take a small lemon-sized portion of dough.

  2. Roll it into a ball and flatten slightly.

  3. Make small holes in the flattened dough using your fingers or fork.

  4. Repeat with the remaining dough.


Step 4: Fry the Chakkalu

  1. Heat oil in a deep pan on medium flame.

  2. Slide chakkalu gently into hot oil.

  3. Fry slowly until golden brown and crisp on both sides.

  4. Remove and drain excess oil.


Tips for Crispy Chakkalu

  • Dough should not be too soft.

  • Fry on medium-low flame for even cooking.

  • Butter helps in crisp texture—do not skip it.

  • Make holes to ensure even frying.


Variations

  • Spicy Chakkalu: Add extra green chilies.

  • Jeera Chakkalu: Increase cumin seeds.

  • Garlic Chakkalu: Add crushed garlic for flavor.


Storage Tips

  • Cool completely before storing.

  • Store in an airtight container.

  • Stays fresh for 2–3 weeks.
